Kale Egg Breakfast Burrito

Preheat oven to 400 degrees.
Dice sweet potato, drizzle with avocado oil, and season with garlic powder, salt, and pepper. Cook diced sweet potatoes on a sheet pan for approximately 30-40 minutes (or until 75% cooked).
Bake bacon on a separate sheet pan for approximately 20 minutes (or to your liking).
Meanwhile, warm a medium size pan with avocado oil. Whisk 2 eggs and slowly pour into pan. Fold in sides until eggs are fully cooked.
Mash 1/2 avocado in a bowl and set aside.
Use a medium sized pan, fill it halfway with water, and bring to a slow simmer. Take a large kale leaf and let it soak in the simmering water for 45 seconds. Remove leaf and pat dry.
Fill kale leaf with mashed avocado, scrambled eggs, sweet potatoes, 2 slices of bacon (diced). Top with salsa.
Serve and enjoy.
