Spiralized Beet Nests

Found pre spiralized beets at the local grocery store.

Sauté the beets in a pan with avocado oil. Season with salt and pepper. Cook for approximately 8-10 minutes.

Divide the beets into two nests and create a hole in the middle.

Slowly crack two eggs inside the beet nests. Cook until eggs are done (I used a lid to speed up this process).

In a separate pan, sauté a huge handful of spinach with 1 tbls. of bone broth for approximately 5 minutes.

Plate with cherry tomatoes.

Serve and enjoy.
