Baked Chicken and Basil Zoodles
Preheat oven to 350 degrees.
Season boneless chicken thighs and bake on a cooking sheet with foil.
Meanwhile, spiralize your zucchini. Set to the side.
Warm a pan with avocado oil. Sauté the zoodles with your basil pesto (I used a pre-made pesto) until zoodles are al dente. Add sliced cherry tomatoes to the basil zoodles, turn pan off.
By this time the inside of your chicken should temp 165 degrees (approximately 18-25 minutes).
Slice chicken and place on top of zoodles.
Serve and enjoy.
