Breakfast Fried Cauliflower Rice

Preheat oven to 400 degrees. Lay bacon on a sheet pan and bake for approximately 15-20 minutes. Set to the side and let cool.

Using a 12” cast iron pan, add 1 tbls. of avocado oil.Once warm, add 1/2 chopped red bell pepper and 1/2 chopped white onion. Sauté for 3 minutes.Add 1 cup of broccoli florets and 1 cup of carrot match sticks. Sauté for 5 minutes.Add 1.5 cups of cauliflower rice. Sauté for 3 minutes.Also add 2 tbls. Coconut Aminos and 1 tbls. Bone broth.Season everything with garlic powder, salt, and pepper to your liking.Create two grooves and crack 2 eggs inside. Turn heat to low and place a lid on top of cast iron pan.Keep a close eye and remove lid once eggs are cooked to your liking. Top the dish off with baked diced bacon, sliced green onion, and Everything But the Bagel Seasoning. Let cool and enjoy.
