Quinoa and Egg Breakfast

Bring 1 cup of water and 1 cup of bone broth to a slight boil. Add 1 cup of quinoa and stir until a slight boil. Place a lid on top, reduce heat to low, and set timer for 20 minutes.
Meanwhile, dice ham and sauté with 1 tbls. Avocado oil. Scramble 2 eggs and add to the sautéed ham. Pull in sides of eggs until it’s cooked to your liking.
Using the same pan, add 1 tbls. Avocado oil and sauté raw spinach. Continuously turn spinach until cooked (approximately 4-5 minutes).
Plate with 1/4 avocado and a handful of organic blueberries.
Serve and enjoy.
